Organic Food Recipes - Starters


Our organic food recipes have been tried and tested, cooked and digested, and found to be good ones. We hope you try them and are happy with the results. Chicken Soup Recipe, with Pasta

**Easy**

Serves 4 (quick to prepare)

  • 900ml Chicken stock
  • 240g or 2 cooked chicken breasts, skin removed and finely shredded
  • 50g fresh pasta, (preferably wholemeal pasta as it is healthier)
  • freshly ground black pepper
  • 20g flat leaf parsley, finely chopped

Place all the stock in a large saucepan and bring to simmering point. Add the chicken and cook for 4 minutes, adding the pasta for the final 2 minutes of the cooking time.

Season to taste with freshly ground black pepper then finish with parsley.

Serve immediately with chunks of organic bread in warm bowls.



Organic Tomato Salsa

** Easy **tomato salsa

Serves 4

Ingredients: Use all organic products

  • 8 Roma tomatoes, washed and diced
  • 3 fresh jalapeno peppers, seeded and chopped (handle carefully - wash hands with soapy water and get rid of the seeds right away - very 'hot')
  • 1/4 red onion, chopped fine
  • 3 green onions, chopped
  • 2 to 3 cloves cloves garlic, crushed
  • 2 to 3 tablespoons chopped fresh cilantro
  • 3 tablespoons fresh lime juice (often I'll add a teaspoon on the lime's zest (grated lime peel) for a stronger lime flavor
  • 1 1/2 teaspoons ground cumin
  • 1 small jicama, peeled and chopped
  • 1 can green chilies, drained
  • Sea salt and ground black pepper to taste

Directions

The reason for Roma tomatoes versus other types is that they are a bit 'meatier'; and not as juicy. You don't want a watery salsa. If you can't find organic Roma tomatoes, use organic beefsteak tomatoes (and remove some of the seeds/juice if necessary).

Mix together all the above ingredients in a bowl. Season with salt and pepper to taste. Let the Salsa sit at least 1 hour before serving; the flavours will intensify if left to sit.
